Expert Baker’s Tips
I absolutely adore making this dessert in early autumn, right when the days start to shorten and it’s time to settle in for cozy evenings. The beauty of this traditional British dessert isn’t just its incredible taste, but also its fantastic adaptability.
One of my favorite hacks is its make-ahead potential. I often prepare it when I have a bit of spare time, or when the apples and blackberries are at their peak freshness. This way, I can easily freeze or refrigerate it, ready to be baked for a big family dinner on another day. It’s wonderfully convenient to simply heat it up and serve, allowing me to focus on other parts of the meal without sacrificing a homemade dessert.
This approach means you can enjoy a freshly baked crumble without the last-minute rush, perfect for entertaining or simply treating yourself after a long day. The flavors only deepen as they sit, making it an even more satisfying experience.
Essential Apple and Blackberry Crumble Ingredients
Crafting the perfect Apple and Blackberry Crumble starts with selecting the right ingredients. Each component plays a vital role in creating that irresistible balance of sweet, tart, and crunchy.

For the Juicy Filling:
- Apples: I highly recommend using Bramley apples, often referred to as cooking apples. Their inherent tartness and ability to break down beautifully when cooked make them ideal for desserts, resulting in a lovely, soft, and juicy filling. However, don’t hesitate to use other apple varieties if you prefer! If you opt for sweeter apples like Honeycrisp or Fuji, you might want to slightly reduce the amount of brown sugar to maintain a balanced flavor profile. Consider using an apple corer for quick and easy preparation.
- Blackberries: Both fresh and frozen blackberries work wonderfully in this recipe. If using fresh, ensure they are ripe and plump. Frozen blackberries are a fantastic year-round option and can be added directly to the dish without thawing, though they may release a bit more liquid during baking.
- Brown Sugar: This is crucial for balancing the tartness of the Bramley apples and adding a rich, caramelized sweetness to the fruit filling. Dark brown sugar will lend a deeper molasses flavor, while light brown sugar offers a milder sweetness.
- Plain Flour: A small amount of plain (all-purpose) flour is added to the fruit mixture to help thicken the juices released during baking, ensuring a perfectly spoonable filling rather than a watery one.
- Lemon Juice and Zest: The fresh zest and juice from a lemon brighten the entire filling, enhancing the fruit flavors and preventing the dessert from becoming overly sweet. The acidity also helps the apples break down nicely during cooking.
- Water: A touch of water provides initial moisture for the apples and blackberries to simmer in, creating that luscious, saucy base for the crumble.
For the Crispy, Golden Topping:
- Plain Flour: Also known as all-purpose flour outside the UK, this forms the foundation of our crumble topping, providing structure and texture.
- Jumbo Oats: These are essential for achieving that rustic, delightfully crunchy texture that defines a perfect crumble. Regular rolled oats can also be used, but jumbo oats offer a more substantial bite.
- Brown Sugar: Incorporating brown sugar into the topping not only adds sweetness but also contributes to the beautiful golden-brown color and a slight caramel note as it bakes.
- Mixed Spice: This warming blend of cinnamon, nutmeg, and cloves is the secret to an incredibly autumnal and aromatic topping. It infuses the entire dessert with a cozy, inviting fragrance and flavor.
- Nuts: Ground almonds contribute a delicate nutty flavor and a finer texture to the crumble, while roughly chopped hazelnuts add a wonderful crunch and a more pronounced nutty taste. Feel free to use other chopped nuts like walnuts or pecans if you prefer, or omit them entirely for a nut-free version.
- Butter: Use good quality salted butter, kept cold and cubed. Cold butter is key to achieving a light, crumbly texture. As you rub it into the dry ingredients, it creates small pockets of fat that steam during baking, resulting in a wonderfully crisp topping.
How to Make the Perfect Apple and Blackberry Crumble
Creating this delicious Apple and Blackberry Crumble is a straightforward process, broken down into a few simple steps. Follow these instructions to achieve a dessert that’s bursting with flavor and delightful textures.

Step 1: Prepare the Fruit Filling. Begin by peeling, coring, and cutting your apples into roughly 2cm (about ¾ inch) cubes. Place the chopped apples into a large ovenproof dish. Add the fresh or frozen blackberries, brown sugar, and plain flour to the dish. Toss these ingredients gently but thoroughly until the fruit is evenly coated. This ensures that every bite is sweet, tart, and perfectly thickened.

Step 2: Add Zest, Juice, and Water. Next, add the vibrant zest and tangy juice from your lemon, along with the specified amount of water, to the fruit mixture. Give everything another good stir. The lemon will brighten the flavors and help the apples soften beautifully during baking, while the water creates a lovely juicy base. Ensure all ingredients are well combined so the flavors meld together.

Step 3: Prepare the Crumble Topping. In a separate large mixing bowl, combine the plain flour, jumbo oats, ground almonds, brown sugar, chopped hazelnuts, and mixed spice. Add the cold, cubed salted butter. Using your fingertips, rub the butter into the dry ingredients. Continue until the mixture resembles coarse breadcrumbs, with some larger clumps of butter still visible. Avoid overworking the dough, as this can make the topping tough rather than crumbly.

Step 4: Assemble and Bake. Preheat your oven to the recommended temperature (180℃/350F fan, 200℃/400F, or Gas Mark 6). Evenly scatter the prepared crumble topping mixture over the apple and blackberry filling in the dish, ensuring the fruit is completely covered. Transfer the dish to the preheated oven and bake for approximately 30 minutes, or until the topping is beautifully golden brown and delightfully crunchy, and the fruit filling is bubbling merrily underneath.
Achieving the Perfect Crumble Consistency
The ideal texture for your crumble topping is key to a truly satisfying dessert. The consistency of the crumble should resemble coarse breadcrumbs, but be careful not to make it too fine! You want some small clumps of butter and flour to remain, as these will crisp up beautifully and provide a lovely varied texture. If your mixture feels too dry and isn’t clumping together at all, try adding a TINY bit of ice-cold water, half a teaspoon at a time, and rubbing it in gently until you achieve the desired consistency. Be vigilant not to overdo it, as too much water will result in a paste-like topping that loses its signature crumbly appeal.
Storing & Making Ahead of Time: Your Convenience Guide
One of the many charms of this Apple and Blackberry Crumble is its incredible flexibility for making ahead and convenient storage. This feature makes it an ideal dessert for busy schedules or when entertaining guests.
In the Fridge: This dessert is fantastic for preparing earlier in the day, which can be a real lifesaver, freeing up precious kitchen and oven space when you’re focusing on your main course. You have two excellent options:
- Bake and Reheat: You can bake the crumble completely, allow it to cool, and then store it in the fridge. When ready to serve, simply reheat thoroughly in the oven until warmed through and the topping is crisp again. This is perfect for those who want minimal fuss before serving.
- Assemble and Bake Fresh: Alternatively, assemble the entire crumble (fruit filling and topping) in your ovenproof dish, cover it tightly with plastic wrap or foil, and pop it into the fridge. When dinner is almost ready, simply transfer it straight from the fridge to the preheated oven and bake as per the recipe instructions. This method yields a perfectly fresh, hot crumble with a wonderfully crisp topping.
Any baked leftovers can also be stored in the fridge once cooled, ideally covered. They can be deliciously reheated in the microwave for a quick single serving, or in the oven for a crisper finish, on another day.
In the Freezer: This crumble is also a freezer champion, allowing you to batch cook a couple to save even more time on a future occasion! Freezing is a brilliant way to enjoy homemade goodness with minimal effort.
- Freeze Before Baking: Prepare the fruit filling and the crumble topping separately, then assemble them in a freezer-safe ovenproof dish. Cover tightly with two layers of foil or a freezer-safe lid. Freeze for up to 3 months. When you’re ready to enjoy it, transfer the frozen crumble to the refrigerator the night before to defrost thoroughly. Once thawed, bake as usual according to the recipe below. You may need to add an extra 5-10 minutes to the baking time if it’s still very cold.
- Freeze Baked Leftovers: Cooked leftovers can also be frozen. Portion the cooled crumble into individual microwave-safe and freezer-safe containers. This way, you can grab a single portion and reheat it straight from the freezer in the microwave for a quick, comforting dessert. For a crispier topping, defrost first and then reheat in the oven until piping hot.
Proper storage ensures you always have a delightful, homemade dessert on hand, ready to bring warmth and joy to any meal.
What to Serve with Your Apple & Blackberry Crumble
The beauty of a warm Apple & Blackberry Crumble is how wonderfully it pairs with a variety of accompaniments. The contrast of the hot, fruity dessert with a cool, creamy element is truly divine. Choose your favorite to complete this ultimate comfort food experience:
- Vanilla Ice Cream: A timeless classic, the cold, creamy vanilla melts into the warm fruit, creating an irresistible blend of temperatures and flavors.
- Pouring Cream: Whether you prefer rich double (heavy) cream or lighter single cream, a generous drizzle adds luxurious smoothness and cuts through the sweetness beautifully.
- Custard: For a truly traditional British dessert experience, thick, warm custard is a must. Its silky texture and sweet vanilla notes perfectly complement the fruit.
- Crème Fraîche: For a slightly more sophisticated and less sweet option, crème fraîche offers a tangy counterpoint that brightens the fruit flavors and adds a lovely creamy richness without being too heavy.
Each option brings its own unique touch, ensuring a delightful pairing for every palate.

Frequently Asked Questions (FAQs)
No, there’s absolutely no need to pre-cook the fruit for this recipe! The apples and blackberries will soften beautifully and cook through perfectly as they bake together with the topping in the oven. This saves you an extra step and makes the preparation even quicker and easier.
Apple & Blackberry Crumble is a beloved traditional British dessert. It features a warm, tender fruit filling (in this case, apples and blackberries) baked beneath a crunchy, typically oat-enriched, streusel-like topping. Unlike a pie, it doesn’t have a pastry base or top crust, making it a simpler and quicker alternative. In the United States and Canada, this type of dessert is often referred to as a ‘crisp’ due to its crispy topping, so you could consider this an Apple & Blackberry Crisp!
Absolutely! While Bramley apples are fantastic for their tartness and soft texture when cooked, you are welcome to use any type of apple you prefer. If you opt for sweeter varieties such as Gala, Fuji, or Honeycrisp, you might want to slightly reduce the amount of brown sugar specified for the filling to prevent the crumble from becoming overly sweet. A good mix of sweet and tart apples can also create a wonderful depth of flavor.
To ensure an extra crispy topping, make sure your butter is very cold when you rub it into the dry ingredients – this creates those essential pockets of air. Don’t overwork the topping; you want a coarse, breadcrumb-like texture with some larger clumps. You can also add a tablespoon of finely chopped nuts (like pecans or walnuts) to the topping mixture for added crunch. Baking it at the correct temperature for the full duration is also crucial for achieving that golden, crunchy finish.
Yes, with a few simple substitutions! For a vegan version, replace the butter in the topping with a good quality plant-based butter alternative. For a gluten-free crumble, substitute the plain flour in both the filling and the topping with a gluten-free all-purpose flour blend. Ensure your jumbo oats are certified gluten-free, as some oats can be cross-contaminated during processing. The taste and texture will still be wonderfully delicious!

Notes
Apples: I use Bramley apples (also known as cooking apples) because they’re lovely and juicy and soft when cooked, so are perfect for dessert, but feel free to use different kinds of apples if you prefer.
To serve: This dessert goes perfectly with vanilla ice cream, pouring cream (double or single), custard or crème fraîche.
Crumble consistency: It should be like breadcrumbs, but be careful it’s not too fine too! It needs to clump together a little. If it doesn’t, add a TINY bit of water at a time (half a teaspoon) until it does. Beware not to overdo it or it will become paste-like and not at all crumbly.
Servings: The nutritional values are based upon 4 sharing this crumble, however this will serve between 4-6 people.
