  • 200 g (1 2/3 cups) Plain flour
  • 1 tsp Baking powder
  • 1 tsp Cayenne pepper (optional)
  • 1 tsp Garlic granules
  • 2 Eggs
  • 150 ml (2/3 cup) Milk
  • 650 g (4 cups) Tinned sweetcorn — drained very well
  • 3 Spring onions, finely sliced
  • 100 g (1 cup) Mature cheddar, grated
  • 2 tbsp Olive oil
  • Sea salt and freshly ground black pepper
  • 5 g (1/4 cup) Coriander, roughly chopped

For the lime yoghurt:

  • 150 g (2/3 cup) Greek yoghurt
