Chef’s Insights: Mastering Air Fryer Tray Bakes

I’m absolutely thrilled by the versatility of our air fryers, especially for crafting delicious, all-in-one traybake-style dinners. What a revelation!

The magic truly happens in the synchronicity of cooking. While our potatoes transform into perfectly crisp, golden nuggets in the air fryer, we can effortlessly stir up the other components in a single pan. This method allows for a truly different, yet consistently delicious meal every time. The air fryer ensures those coveted crispy edges and fluffy interiors on your potatoes, a texture that can be harder to achieve consistently in a traditional oven when mixed with other ingredients from the start.

If the sheer simplicity and incredible flavor of this dish resonate with you, I highly recommend exploring my Air Fryer Chicken Fajita Potatoes. It offers a similar ease of preparation with a completely different, but equally delightful, flavor profile that I’m sure you’ll love just as much.

Essential Ingredients for Air Fryer Potatoes with Chicken and Chorizo

Crafting this flavorful dish begins with selecting the right ingredients. Each component plays a vital role in achieving that perfect balance of textures and tastes.

Raw ingredients neatly arranged on a pristine white counter, featuring fresh chicken breasts, whole potatoes, a ring of chorizo, vibrant bell peppers, a tub of soft cream cheese, and various spices, ready for preparation.

For the irresistibly crispy air fryer potatoes:

  • Potatoes: The foundation of this dish! Opt for starchy varieties renowned for their ability to become wonderfully soft and fluffy on the inside while achieving a golden, crispy exterior when roasted. Excellent choices include Maris Piper, King Edward, or Rooster potatoes. Precision is key here; cube them into uniform roughly 1cm squares to ensure even cooking and maximum surface area for crispiness.
  • Garlic Granules: A quick and easy way to infuse a subtle, aromatic garlic flavor into the potatoes without the fuss of mincing fresh garlic. It coats evenly and prevents burning, unlike fresh garlic.
  • Olive Oil: Essential for coating the potato cubes, allowing the spices to adhere and promoting that glorious crispy texture in the air fryer. A good quality extra virgin olive oil enhances the overall flavor.
  • Sweet Smoked Paprika: This vibrant spice is non-negotiable! It imparts a beautiful color and a depth of smoky-sweet flavor that complements the chorizo perfectly, truly embodying the Spanish essence of the dish.

For the rich and savory chicken and chorizo mixture:

  • Olive Oil: Used for initially searing the chorizo and then cooking the chicken and vegetables, providing a flavorful base for the pan.
  • Chicken: For this recipe, we recommend using 2 medium chicken breasts, diced into bite-sized pieces. This portion is ideal for two generous servings. Alternatively, chicken thighs can be used for even juicier results, just ensure they are also diced.
  • Chorizo: The star of the show! It’s crucial to select ring sausage-style chorizo (the kind you can slice into rounds or dice yourself) rather than the finely sliced, pre-packaged variety often used for charcuterie boards. The ring chorizo releases its vibrant, spicy, and smoky oils when cooked, which are vital for flavoring the entire dish. Dice it into small cubes.
  • Veggies: We suggest using bell peppers (any color, sliced or diced) for their sweetness and crunch, and a handful of green olives (halved) for a briny, tangy counterpoint that brightens the rich flavors. Feel free to experiment with other quick-cooking vegetables like onions, zucchini, or cherry tomatoes.
  • Chicken Stock: A simple cube-made chicken stock works perfectly here. It forms the base of our luscious sauce, adding moisture and depth of flavor.
  • Cream Cheese: You’ll need approximately 100g (about 0.5 cups) of your favorite cream cheese. This is what creates that wonderfully creamy, slightly tangy sauce that coats every ingredient, binding the flavors together beautifully. Full-fat or light cream cheese will both work, but full-fat will offer a richer consistency.
  • Grated Cheese: A generous topping of around 150g (about 1.3 cups) of your preferred grated cheese. I typically use mature cheddar for its sharp flavor and excellent melting properties, but Monterey Jack, mozzarella, or a Spanish blend would also be fantastic choices for a gooey, golden crust.
  • To Garnish: Freshly chopped parsley adds a burst of fresh flavor and a pop of color, making the dish visually appealing and enhancing its Mediterranean character.
  • Sea Salt and Freshly Ground Black Pepper: Seasoning to taste is important, but exercise caution! Chorizo is inherently salty, and chicken stock also contributes sodium. Always taste before adding excessive salt to avoid over-seasoning. A little freshly ground black pepper will enhance all the flavors.

How to Craft Your Delectable Air Fryer Chicken & Chorizo Potato Tray Bake

Follow these simple steps to create a truly memorable meal:

An air fryer basket containing evenly cubed potatoes, thoroughly coated with a blend of sweet smoked paprika and other spices, ready for cooking.

1. **Prepare the Potatoes:** In a large bowl, combine your diced potatoes with the garlic granules, sweet smoked paprika, and a drizzle of olive oil. Toss everything together until the potatoes are evenly coated. Transfer them to your air fryer basket or tray. Cook at 200℃ (approximately 400°F) for about 20 minutes, or until they are beautifully soft on the inside and irresistibly crispy and golden brown on the edges. Give them a shake halfway through for even crisping.

A non-stick frying pan, glistening with the rich, red oils released from cubes of chorizo, as they fry to a perfect crisp over medium-high heat.

2. **Render the Chorizo:** While the potatoes are air frying, heat a large frying pan or skillet over a medium-high heat. Add the diced chorizo to the dry pan (no extra oil needed, as chorizo releases its own fat). Fry for about 5 minutes, stirring occasionally, until the chorizo pieces are delightfully crispy and the bottom of the pan is coated with its vibrant, smoky orange oil. This flavorful oil is crucial for the rest of the dish.

A pan filled with diced chicken, colorful sliced peppers, and green olives, actively cooking in the residual chorizo oil, creating a fragrant and inviting mixture.

3. **Cook Chicken and Veggies:** Using a slotted spoon, carefully remove the crispy chorizo from the pan, leaving the rendered oil behind. Add the diced chicken to the same pan and fry for about 5 minutes until browned on all sides and mostly cooked through. Then, add the sliced peppers and halved green olives to the pan. Continue to cook for another 5 minutes, stirring occasionally, until the peppers have softened slightly and the chicken is fully cooked.

The same pan, now with the cooked chicken, peppers, and olives, having the crispy chorizo reintroduced and stirred in, blending all the savory elements.

4. **Reintroduce Chorizo:** Return the crispy chorizo back into the pan with the chicken and vegetables. Give it a good stir to combine all the wonderful flavors and textures. This step ensures the chorizo remains distinct and adds its signature pop to the dish.

A skilled hand pours hot chicken stock into the pan of chicken, chorizo, and vegetables, while a spoon stirs in creamy white cream cheese, creating a rich and inviting sauce.

5. **Create the Creamy Sauce:** Pour the hot chicken stock into the pan, scraping up any delicious browned bits from the bottom. Stir in the cream cheese until it has fully melted and created a smooth, rich sauce. Allow the mixture to simmer gently for a few minutes to thicken slightly and allow the flavors to meld. Finally, stir in the air-fried potatoes, ensuring every crispy cube is coated in the luxurious sauce.

A generous layer of grated cheddar cheese sprinkled over the top of the pan, covering the vibrant mixture of chicken, chorizo, and air-fried potatoes, ready for grilling.

6. **Melt the Cheese and Garnish:** Evenly top the entire contents of the pan with the grated cheddar cheese. Transfer the pan under a preheated grill (broiler) for a few minutes. Keep a close eye on it until the cheese is beautifully melted, bubbly, and golden brown. Once out of the grill, generously garnish with fresh chopped parsley. Serve immediately and enjoy the irresistible flavors!

Storing & Reheating Your Delicious Leftovers

This Air Fryer Chicken & Chorizo Potatoes tray bake is often so good, there aren’t any leftovers! But if you do find yourself with extra, here’s how to store and reheat it safely and deliciously:

In the fridge:

Allow the dish to cool completely to room temperature within two hours of cooking. Transfer it into an airtight container and store in the fridge for up to 3 days. When ready to eat, reheat thoroughly until piping hot throughout. You can warm it in a microwave, stirring occasionally, or in a pan over medium heat, adding a splash of chicken stock or water if the sauce appears too thick.

In the freezer:

This dish freezes surprisingly well! Once cooled, divide the tray bake into individual portions and place them in freezer-safe containers or sturdy freezer bags. Ensure they are sealed tightly to prevent freezer burn. It can be stored in the freezer for up to 3 months. To reheat, thaw overnight in the fridge, then reheat until piping hot in a microwave or a pan as described above. Always ensure the food reaches an internal temperature of 74°C (165°F) for safety.
